In a crockpot, combine the semi-sweet chocolate chips and milk chocolate chips.
Set the crockpot to low heat and let the chocolate melt slowly, stirring occasionally to ensure even melting, for about 1-2 hours.
Once the chocolate is fully melted and smooth, add the roasted peanuts and vanilla extract to the crockpot. If using mini marshmallows, fold them in at this point for added texture and sweetness.
Stir everything together until the peanuts are well coated with the chocolate mixture.
Using a spoon or cookie scoop, drop clusters of the mixture onto a lined baking sheet.
If desired, sprinkle a pinch of sea salt on top of each cluster for a touch of flavor contrast.
Let the clusters cool at room temperature until they harden, or place them in the refrigerator for faster setting.
Once set, carefully remove the clusters from the baking sheet and store them in an airtight container at room temperature.
