Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition. Then, mix in the brewed coffee and vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over-mix.
Pour the batter into the prepared baking pan and smooth the top.
In a separate bowl, mix the brown sugar and heavy cream until combined. Gently pour this mixture over the batter in the pan (do not stir it in).
Optionally, sprinkle the chocolate chips over the top of the cake batter for added flavor.
Bake in the preheated oven for 35-40 minutes, or until the edges are set but the center is still gooey. A toothpick should come out slightly sticky.
Allow the cake to cool in the pan for 10 minutes before serving.
Notes
Cut the cake into squares and drizzle with additional caramel sauce or whipped cream. Serve warm for a gooey texture.
