In a large mixing bowl, combine rolled oats, almond butter, honey or maple syrup, shredded coconut, chopped almonds, vanilla extract, almond extract, and the pinch of salt.
Mix the ingredients together until thoroughly combined. You may find it easier to use your hands to knead the mixture gently.
Once the mixture is fully combined, add the mini chocolate chips if using and mix again.
Refrigerate the mixture for about 30 minutes. This helps it firm up and makes it easier to roll into bites.
After chilling, use your hands to roll the mixture into small balls, about 1 inch in diameter.
Place the energy bites on a parchment-lined baking sheet.
Optionally, you can roll the bites in extra shredded coconut or chopped almonds to coat them before storing.
Refrigerate the rolled energy bites for another 15 minutes to set.

Serve these energy bites in a small bowl or on a platter with a dusting of coconut on top for a pretty aesthetic. They also make a great grab-and-go snack!
