Skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
In a large bowl, combine the soy sauce, honey, sesame oil, garlic powder, ginger powder, salt, and pepper. Mix well to create a marinade.
Add the chicken cubes to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Preheat your grill or grill pan to medium-high heat.
While the grill is heating, assemble the kabobs. Thread the marinated chicken, pineapple chunks, red bell pepper, green bell pepper, and red onion onto the skewers, alternating between the ingredients for a colorful presentation.
Once the grill is ready, place the kabobs on it. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Remove the kabobs from the grill and let them rest for a few minutes before serving.
Notes
Serve the kabobs on a large platter and garnish with fresh cilantro and lime wedges for an added tropical flair. You can also drizzle a little extra honey over the top for sweetness.
