Cook the rice noodles according to the package instructions. Drain and set aside.
In a large skillet over medium-high heat, add sesame oil. Once hot, add the sliced beef and season with salt and pepper. Sauté until browned, about 3-5 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add minced garlic and ginger, cooking for about 30 seconds until fragrant. Then add broccoli, bell pepper, and snap peas. Stir-fry for 5-7 minutes until they are tender-crisp.
In a small bowl, combine soy sauce, honey, and rice vinegar. Whisk until well mixed. Pour this mixture over the cooked vegetables.
Return the beef to the skillet and toss everything together until the beef is coated in the sauce and heated through.
Gently mix in the cooked rice noodles, stirring to combine everything well. Adjust seasoning with additional salt and pepper if needed.
Divide the teriyaki beef noodles among bowls. Garnish with chopped green onions and sesame seeds for added crunch and flavor.
