Instructions
In a bowl, combine the cooked ground meat, diced tomatoes, sliced olives, and red onion. Mix until everything is well incorporated.
Place two slices of sourdough bread on a clean surface. Layer half of the cheddar and Monterey Jack cheese on each slice. Evenly distribute the taco filling over one side, and add the remaining cheese on top before closing with the second slice of bread.
Spread 1 tablespoon of butter on one side of each sandwich, ensuring even coverage.
Preheat a skillet over medium heat. Once hot, place the sandwich butter-side down into the skillet. Cook for about 4-5 minutes, or until the bread is golden brown.
Butter the top slice of bread before flipping the sandwich. Grill for an additional 4-5 minutes until the cheese is melted and the bread is crispy.
Remove from the skillet, slice in half, and serve immediately with shredded lettuce on the side and a dollop of salsa and sour cream for dipping.
