Instructions
Start by cooking the rice noodles according to package instructions. Drain and set aside.
In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
Add the sliced red bell pepper and snap peas to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
Stir in the cooked rice noodles. Add the sweet chili sauce and soy sauce, tossing everything together to ensure the noodles are well-coated.
Continue to sauté for another 2-3 minutes, allowing the noodles to absorb the flavors. Season with salt and pepper to taste.
Remove from heat and transfer the noodles to a serving platter. Sprinkle with chopped green onions and sesame seeds. Garnish with fresh cilantro.
Notes
Feel free to add protein like chicken or tofu for a heartier dish.
