Instructions
Cook the rice noodles according to package instructions. Drain and set aside.
In a small bowl, mix sweet chili sauce, soy sauce, and sesame oil together. Set aside.
In a large pan or wok, heat a tablespoon of oil over medium heat and add the minced garlic and ginger. Sauté until fragrant, about 30 seconds.
Add the julienned bell pepper and snap peas to the pan. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
Pour the sweet chili sauce mixture over the vegetables and stir to combine.
Add the cooked rice noodles to the pan, tossing everything together until the noodles are evenly coated and heated through, about 2-3 minutes.
Remove from heat and stir in half of the chopped green onions.
Serve hot, garnished with remaining green onions, sesame seeds, and cilantro leaves if desired.

Add protein like chicken or tofu for a heartier meal.
