In a large mixing bowl, combine the melted butter, brown sugar, ground cinnamon, paprika, salt, and pepper. Mix well until the sugar and spices are evenly incorporated into the butter.
Add the baby carrots to the bowl and toss them in the brown sugar mixture until they are fully coated.
Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
Remove the carrots from the oven and let them cool for a few minutes.
Transfer the roasted carrots to a serving platter and garnish with chopped fresh parsley.
