Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until fully combined.
Coat the Roll-Ups: Drench each roll-up in the egg mixture, ensuring they are coated on all sides.
Cook the Roll-Ups: In a large skillet, melt the butter over medium heat. Once hot, place a few roll-ups in the skillet, cooking for about 2-3 minutes on each side until golden brown and crispy.
Sugar Coating: In a small bowl, combine the granulated sugar and remaining ground cinnamon. As the roll-ups come out of the skillet, immediately coat them in the sugar mixture for added sweetness.
