4 cups frozen hash browns, thawed

1/4 cup butter, melted

8 large eggs

1 cup whole milk

1 cup shredded mozzarella cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1 tsp garlic powder

Salt and pepper to taste

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the thawed hash browns and melted butter. Mix until the hash browns are evenly coated.

      Press the hash brown mixture into the bottom and up the sides of a greased 9-inch pie dish to form a crust. Bake in the preheated oven for 20 minutes or until the edges are golden brown.

        While the crust is baking, whisk together the eggs and milk in a separate bowl. Season with garlic powder, salt, and pepper.

          Once the crust is ready, remove it from the oven and sprinkle half of the shredded mozzarella cheese over the bottom.

            Evenly distribute the chopped spinach, halved cherry tomatoes, and diced bell pepper over the cheese.

              Pour the egg mixture over the vegetables, ensuring even coverage.

                Top with the remaining mozzarella cheese.

                  Bake for an additional 25-30 minutes or until the quiche is set in the middle and lightly browned on top.

                    Let it cool for 5-10 minutes before slicing.
