Ingredients

1 pound thick-cut bacon

10 small jalapeño peppers

8 ounces cream cheese, softened

1 teaspoon chipotle chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon pepper

Chopped chives for garnish

Toothpicks for assembly

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Jalapeños: Slice each jalapeño pepper in half lengthwise, and remove the seeds and membranes for a milder taste, or leave them if you want extra heat.

Make the Filling: In a bowl, mix together the softened cream cheese, chipotle chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

Fill the Peppers: Use a spoon or a piping bag to fill each jalapeño half with the cream cheese mixture. Be generous but ensure they are not overflowing.

Wrap with Bacon: Take a strip of bacon and cut it in half. Wrap each filled jalapeño half with bacon, securing it with a toothpick.

Bake the Pigshots: Place the assembled pigshots onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the cream cheese filling is bubbly.

Garnish and Serve: Once done, remove from the oven and let them cool slightly. Sprinkle with chopped chives for an extra burst of flavor and color.
