Instructions
Begin by cooking the egg noodles according to the package instructions. Drain and set aside.
In a large frying pan or wok, heat the sesame oil over medium-high heat.
Add the minced garlic and grated ginger to the pan, stirring for about 30 seconds until fragrant.
Add the sliced chicken to the pan and stir-fry for about 5-6 minutes, or until the chicken is cooked through and slightly golden.
Toss in the red bell pepper, broccoli florets, and julienned carrot. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
In a small bowl, whisk together the soy sauce, honey, and rice vinegar. Pour this sauce over the stir-fry and toss everything to coat evenly.
Add the cooked egg noodles to the pan and mix well, allowing the noodles to heat through for about 2 minutes.
Season with salt, pepper, and sprinkle sesame seeds over the top before removing from heat.
Garnish with chopped spring onions just before serving.
Notes
Serve in deep bowls with additional sesame seeds and spring onions for a colorful presentation.
