In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and sauté for about 5-7 minutes until they begin to soften.
Push the sweet potatoes to one side of the skillet and add the sliced sausage to the other side. Cook for about 5-6 minutes until the sausage is browned.
Add the chopped red onion and bell peppers to the skillet. Sauté everything together for another 5 minutes until the vegetables are tender.
Stir in minced garlic, smoked paprika, honey, salt, and black pepper. Mix thoroughly to combine all the ingredients.
Cook for an additional 2-3 minutes, allowing the flavors to meld and the garlic to become fragrant.
Remove from heat, and sprinkle fresh parsley on top for garnish.
