Instructions
Preheat your oven to 350°F (175°C) and grease a mini muffin tin with cooking spray or line with mini muffin liners.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.
In another bowl, mix the buttermilk and egg until fully blended.
Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix.
Fold in the shredded cheddar cheese, cooked sausage, and chives if using, ensuring they are evenly distributed throughout the batter.
Spoon the batter into the prepared mini muffin tin, filling each cup about ¾ full.
Bake for 15-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
Serve warm or at room temperature as a delicious snack or appetizer!
