Ingredients

can (15 oz)
chickpeas, drained and rinsed
1
medium
roasted red pepper, skin removed and roughly chopped

tablespoons
tahini
2
tablespoons
olive oil
2
tablespoons
lemon juice
1
clove
garlic, minced
1/2
teaspoon
ground cumin
to taste
salt
for garnish
fresh parsley
for drizzling
extra olive oil
Instructions
In a food processor, combine the chickpeas, roasted red pepper, tahini, olive oil, lemon juice, minced garlic, and ground cumin.
Blend the mixture on high until smooth, scraping down the sides as needed.
If the hummus is too thick, add 1-2 tablespoons of water to reach your desired consistency and blend again.
Season with salt to taste and blend briefly to combine.
Transfer the hummus to a serving bowl and create a small well in the center.
Drizzle additional olive oil in the well and garnish with chopped fresh parsley.
Notes
Serve with pita bread or fresh vegetables.
