Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped pecans, shredded coconut, pumpkin pie spice, and sea salt. Mix well to distribute the spices evenly.
In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, canned pumpkin puree, and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and stir until all the oats and nuts are thoroughly coated.
Spread the granola mixture evenly onto the prepared baking sheet, pressing it down gently.
Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even browning. The granola should be golden and fragrant.
Remove from the oven and let it cool completely on the baking sheet. This will help it to clump together.
Once cooled, add dried cranberries or raisins if desired, and mix to combine.
Transfer the granola to an airtight container for storage.
Notes
Serve in a glass jar or bowl with a sprinkle of pumpkin seeds and a drizzle of honey. Great with yogurt or milk.
