In a large mixing bowl, combine the rolled oats, almond butter, pumpkin puree, and honey (or maple syrup). Mix until well combined.
Add in the pumpkin spice blend, vanilla extract, and a pinch of salt, mixing until all ingredients are evenly incorporated.
If using, fold in the mini chocolate chips and chopped nuts for added texture and flavor.
Once the mixture is fully blended, use your hands to form small balls, about 1 inch in diameter.
Place the energy bites on a parchment-lined baking sheet or plate.
Once all bites are formed, refrigerate for at least 30 minutes to firm up.
After chilling, transfer the energy bites to an airtight container for storage. They can be kept in the fridge for up to a week or frozen for longer storage.

For a fun twist, roll the energy bites in shredded coconut or ground nuts for added flavor and crunch!
