4 bone-in pork chops (about 1 inch thick)

4 large russet potatoes, peeled and thinly sliced

1 large onion, thinly sliced

2 cups shredded cheddar cheese

1 cup heavy cream

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium-high heat. Season pork chops with salt, pepper, thyme, and smoked paprika. Sear the pork chops for 3-4 minutes on each side until browned. Remove from the skillet and set aside.

      In the same skillet, add the sliced onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

        In a large bowl, combine the sliced potatoes, sautéed onions, and half of the cheddar cheese. Toss to mix evenly.

          Spread half of the potato mixture in the bottom of a greased 9x13 inch casserole dish. Arrange the browned pork chops on top, followed by the remaining potato mixture.

            Pour the heavy cream evenly over the top of the casserole. Sprinkle the remaining cheddar cheese on top.

              Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                Let the casserole cool for 5 minutes before serving. Garnish with freshly chopped parsley if desired.
