Peruvian Chicken with Green Sauce

4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

Salt and pepper to taste

2 cups chicken broth

1 tablespoon cumin

1 tablespoon paprika

For the Green Sauce:

1 cup fresh cilantro, chopped

1/2 cup mayonnaise

1 tablespoon lime juice

1 jalapeño, seeded and chopped

2 garlic cloves, minced

Salt to taste

Marinate the Chicken: In a bowl, combine olive oil, salt, pepper, cumin, and paprika. Rub this mixture all over the chicken thighs. Allow the chicken to marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

    Cook the Chicken: Preheat your oven to 425°F (220°C). In a large oven-safe skillet, place the marinated chicken skin-side down over medium-high heat. Sear for about 5-7 minutes until the skin is golden brown. Flip the chicken over, then pour the chicken broth into the skillet.

      Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.

        Prepare the Green Sauce: While the chicken is baking, blend together the cilantro, mayonnaise, lime juice, jalapeño, garlic, and salt in a food processor until smooth. Adjust the seasoning as desired.
