2 boneless, skinless chicken breasts

8 ounces fettuccine or penne pasta

1 cup sun-dried tomatoes in olive oil, drained and chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach, roughly chopped

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the fettuccine or penne according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside to rest before slicing.
