In a large mixing bowl, combine the ground chicken with maple syrup, chopped onion, minced garlic, Dijon mustard, smoked paprika, salt, and black pepper. Mix until well combined.
Form the mixture into small patties, roughly the size of the slider buns. You should yield about 8 patties.
Preheat a grill or grill pan over medium heat. Cook the chicken patties for about 5-6 minutes per side or until they are cooked through and reach an internal temperature of 165°F (75°C).
In the last minute of cooking, place a slice of cheddar cheese on each patty, allowing it to melt slightly.
While the chicken is cooking, toast the slider buns lightly on the grill.
Assemble the sliders by spreading a thin layer of mayonnaise on the bottom half of each bun. Place a lettuce leaf on top, followed by the chicken patty with melted cheese.
Add a slice of tomato and, if desired, some crispy fried onions for added crunch. Cap with the top half of the bun.

Arrange the sliders on a large platter and garnish with fresh herbs like parsley or cilantro. Serve with extra maple syrup on the side for drizzling.
