Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine honey, Sriracha, soy sauce, apple cider vinegar, minced garlic, grated ginger, and sesame oil. Whisk until well blended to create the sauce.
Season the chicken wings with salt and pepper, then place them in a large bowl.
Pour the sauce over the wings, making sure they are evenly coated. You can reserve a bit of sauce for brushing later if desired.
Spread the coated wings in a single layer on the prepared baking sheet.
Bake in the heated oven for 30-35 minutes, flipping halfway through, until the wings are crispy and cooked through.
During the last 5 minutes of baking, brush a little of the reserved sauce over the wings for extra flavor and stickiness.
Once cooked, remove the wings from the oven and let them rest for a few minutes.
Garnish with sesame seeds and chopped green onions before serving.
