A delicious and easy-to-make dish featuring marinated chicken thighs, jasmine rice, and colorful bell peppers, all tossed together with a sweet and tangy BBQ sauce.
In a medium bowl, mix the BBQ sauce, honey, soy sauce, smoked paprika, garlic, salt, and pepper to make a marinade.
Add the diced chicken thighs to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
Heat olive oil in a large skillet over medium heat. Once hot, add the marinated chicken thighs and cook for about 7-8 minutes, or until they are cooked through and slightly caramelized.
Add the sliced bell peppers to the skillet and continue cooking for another 3-4 minutes until the peppers are tender.
In a large bowl, combine the cooked jasmine rice with the chicken and pepper mixture. Stir gently until well incorporated.
Taste and adjust seasoning if necessary. If you prefer a bit more sauce, add additional BBQ sauce at this stage.
Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds over the top.
