Instructions
In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, diced carrots, and celery. Cook for another 3-4 minutes until slightly softened.
Add the chopped bell pepper, zucchini, and green beans to the pot. Cook for an additional 5 minutes, stirring occasionally.
Pour in the diced tomatoes with their juices and the vegetable broth. Stir to combine.
Sprinkle in the dried oregano, thyme, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat and stir in the orzo pasta. Simmer for about 8-10 minutes, or until the orzo is al dente and the vegetables are tender.
Taste for seasoning and adjust with more salt and pepper if needed.
Serve the soup hot, garnished with fresh parsley and a wedge of lemon for added brightness.
