Instructions
In a bowl, mix together the sharp cheddar cheese, Monterey Jack cheese, cream cheese, ground beef (or black beans), diced tomatoes, green onions, garlic powder, onion powder, salt, and pepper until well combined.
Lay one flour tortilla flat on a clean surface. Spread half of the cheese mixture evenly over one half of the tortilla.
Fold the other half of the tortilla over the cheese mixture to create a half-moon shape. Press down lightly to secure the filling.
Preheat a large skillet over medium heat and lightly grease it with cooking spray or butter.
Place the prepared burrito seam-side down in the skillet. Cook for about 3-4 minutes or until golden brown and crispy, then carefully flip it over and cook the other side for another 3-4 minutes.
Once both sides are crispy and the cheese is melted, remove the burrito from the skillet and allow it to cool for a minute before slicing it in half.
Repeat the process with the second tortilla and remaining cheese mixture.
Serve the grilled cheese burritos warm, with salsa or sour cream on the side if desired.
Notes
For a vegetarian option, substitute ground beef with black beans.
