In a medium mixing bowl, combine the Greek yogurt, Dijon mustard, and honey. Stir until smooth and well blended.
Add the shredded chicken, celery, red onion, cucumber, and olives to the bowl. Gently fold everything together until the chicken is well coated in the yogurt mixture.
Stir in the fresh dill, and season with salt and pepper to taste. Adjust the seasoning if necessary.
Place a large tortilla on a clean surface. Lay a few lettuce leaves down the center of the tortilla.
Spoon a generous amount of the chicken salad mixture over the lettuce, ensuring it’s evenly spread but not overloaded.
Carefully wrap the tortilla by folding in the sides and rolling it up from the bottom to the top, creating a neat wrap.
Repeat the process with the remaining tortillas and filling.
Slice each wrap in half diagonally, and serve immediately, garnished with cherry tomato halves on the side.
