Ingredients

24 Golden Oreos, crushed (plus extra for garnish)

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, chopped

1/2 cup sour cream

1 tablespoon lemon juice

Pinch of salt

Instructions

Preheat your oven to 325°F (160°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

In a medium bowl, combine the crushed Golden Oreos and melted butter. Mix until the Oreo crumbs are fully coated with butter.

Press the Oreo mixture firmly into the bottom of the prepared baking dish to create an even crust layer. Set aside.

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Gradually add in the granulated sugar and continue to beat until well blended.

Add the vanilla extract and one egg at a time, ensuring each is fully incorporated before adding the next.

Mix the sour cream and lemon juice into the cream cheese mixture, followed by a pinch of salt. Gently fold in the chopped strawberries.

Pour the cheesecake filling over the Oreo crust in the baking dish, smoothing it out evenly.

Bake in the preheated oven for 35-40 minutes, or until the edges are set but the center still has a slight jiggle.

Remove from the oven and let it cool in the pan on a wire rack before refrigerating for at least 4 hours or overnight for better slicing.

Once chilled, lift the cheesecake out of the pan using the parchment overhang. Cut into bars and garnish with extra crushed Golden Oreos on top.
