Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray it with cooking spray or drizzle with olive oil.
In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, minced garlic, Italian seasoning, paprika, salt, and pepper. Mix well.
In another bowl, whisk the eggs until fully combined.
Dip each chicken tender into the egg mixture, allowing any excess to drip off, then coat it thoroughly in the breadcrumb mixture. Press gently to ensure the coating sticks. Place the coated chicken tenders on the prepared baking sheet.
Once all tenders are coated, lightly spray the tops with cooking spray or drizzle a little olive oil to help them crisp up while baking.
Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and golden brown. Flip the tenders halfway through cooking for even browning.
After baking, remove from the oven and let them cool slightly; garnish with chopped fresh parsley before serving.
