Instructions
In a small bowl, mix the olive oil, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
In a large mixing bowl, add the chopped vegetables (bell pepper, zucchini, yellow squash, red onion, cherry tomatoes, and mushrooms) and pour the marinade over them.
Gently toss the vegetables until they are well coated in the marinade. Cover and let them marinate for at least 30 minutes to enhance the flavors.
Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 20 minutes beforehand to prevent burning.
Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and have grill marks.
Once done, remove the skewers from the grill and allow them to cool slightly.
Garnish with fresh parsley before serving to add a pop of color and freshness.
