4 boneless, skinless chicken breasts

4 cloves garlic, minced

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 tablespoon fresh parsley, chopped

1 tablespoon olive oil

Salt and pepper to taste

1 cup orzo pasta

3 cups chicken broth

Zest and juice of 1 lemon

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

Fresh basil leaves for garnish

Marinate the Chicken: In a small bowl, mix minced garlic, Italian herbs, olive oil, salt, and pepper. Rub this mixture onto the chicken breasts and let marinate for at least 30 minutes (or up to overnight for deeper flavor).

    Cook the Orzo: In a medium saucepan, bring the chicken broth to a boil. Add the orzo and cook according to package instructions until al dente. Once cooked, drain and return to the pot. Stir in lemon zest, lemon juice, and halved cherry tomatoes. Season with salt and pepper to taste.

      Cook the Chicken: In a large skillet, heat a teaspoon of olive oil over medium-high heat. Add the marinated chicken breasts and sear for about 5-7 minutes on each side until fully cooked and golden brown. Use a meat thermometer to ensure they reach an internal temperature of 165°F (75°C).

        Combine: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice the chicken and lay it on top of the lemon orzo in the pot.
