Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy (about 2-3 minutes).
Add in the egg and vanilla extract, mixing until well combined.
In another bowl, whisk together the flour, baking soda, salt, and cake mix until evenly blended.
Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.
Gently fold in the rainbow sprinkles and white chocolate chips (if using) until evenly distributed throughout the dough.
Scoop tablespoon-sized balls of dough and place them about 2 inches apart on the prepared baking sheet.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve on a colorful platter, and feel free to top each cookie with an extra sprinkle or two for added fun!
