1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sriracha (adjust to taste)

1 cup baby spinach

2 green onions, sliced

2 soft-boiled eggs

1 tablespoon sesame seeds

Prepare Chicken Thighs: Season chicken thighs with salt and pepper. In a large pot, heat sesame oil over medium heat. Add chicken thighs and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove, let rest, and slice into thin strips.
