After draining and rinsing the chickpeas, pat them dry with paper towels to ensure they roast instead of steam.
In a large mixing bowl, combine the chickpeas with olive oil, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix until the chickpeas are evenly coated.
Spread the chickpeas out in a single layer on the baking sheet.
Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through to ensure even cooking. Look for a crispy texture and golden color.
Remove the chickpeas from the oven and immediately sprinkle the grated Parmesan over the hot chickpeas, tossing gently to help the cheese adhere.
Return to the oven for an additional 5-7 minutes until the cheese is melted and slightly golden.
Once done, let cool for a few minutes before transferring to a serving bowl. Garnish with freshly chopped parsley.
