Start by preheating your air fryer to 400°F (200°C) for about 5 minutes.
In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Mix well until all the dry ingredients are evenly distributed.
In another bowl, beat the egg until smooth.
Take each zucchini fry, dip it into the beaten egg allowing the excess to drip off, and then coat it thoroughly in the breadcrumb mixture, pressing gently to ensure it adheres well.
Once all the fries are coated, spray them lightly with olive oil to help with browning and crispiness.
Place the coated zucchini fries in the air fryer basket in a single layer, making sure not to overcrowd. You may need to cook in batches depending on the size of your air fryer.
Air fry the zucchini fries for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
Once done, remove them from the air fryer and let them cool for a minute.

Serve with marinara sauce or garlic aioli for dipping. Garnish with fresh parsley.
