Start by preheating your air fryer to 400°F (200°C).
In a large bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well to ensure even distribution of the seasonings.
Set up a breading station: In one bowl, have the beaten eggs ready. In the other, place the breadcrumb mixture.
Take each zucchini fry and dip it first into the beaten eggs, ensuring it's fully coated.
Then, transfer the zucchini to the breadcrumb mixture, pressing gently to adhere the crumbs to the zucchini. Make sure it’s evenly coated.
Place the coated zucchini fries in a single layer in the air fryer basket. Make sure they are not overcrowded for optimal crispiness. If needed, do this in batches.
Lightly spray the tops of the zucchini fries with olive oil spray to help them crisp up.
Cook the zucchini fries in the air fryer for 10-12 minutes, flipping them halfway through to ensure an even golden color.
Once they are crispy and golden brown, remove them from the air fryer and let them cool slightly before serving.
Notes
Serve warm with marinara sauce or garlic aioli for dipping. Garnish with fresh parsley for color.
