onion, diced

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Pour in the vegetable broth and bring it to a gentle boil.
Add the tortellini to the pot and cook according to the package instructions (usually about 3-5 minutes).
Once the tortellini is cooked, reduce the heat to low and stir in the heavy cream and Italian seasoning. Mix well.
Add the chopped spinach to the soup and stir until it wilts (about 2 minutes).
Season with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese on top.
