Instructions
In a large skillet, bring water to a boil and cook the tortellini according to package instructions. Drain and set aside.
In the same skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach to the skillet and cook, stirring frequently, until wilted (about 2-3 minutes).
Pour in the heavy cream and add the grated Parmesan cheese. Stir until the cheese has melted and the sauce is creamy.
Sprinkle in the nutmeg, salt, and pepper, adjusting the taste as desired. If using, add the chopped sun-dried tomatoes for an extra burst of flavor.
Gently toss the cooked tortellini in the creamy spinach sauce until fully coated. Cook for an additional 1-2 minutes to heat everything through.
Remove from heat and garnish with fresh basil leaves before serving.
