In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup), and mix until well combined.
Add the chopped dried cranberries, orange zest, fresh orange juice, ground flaxseed, vanilla extract, salt, and cinnamon (if using) to the bowl.
Mix all the ingredients thoroughly until everything is evenly incorporated. You might need to use your hands to ensure everything binds together well.
Once the mixture is ready, scoop out a tablespoon of the mixture and roll it into a ball using your palms. Repeat until all the mixture is formed into bite-sized energy balls.
Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Once chilled, transfer the energy bites to an airtight container and store them in the refrigerator for up to one week.
