Instructions
In a large mixing bowl, combine the rolled oats, shredded coconut, ground chia seeds, and sea salt. Mix until evenly combined.
In a separate bowl, whisk together the almond butter, honey (or maple syrup), lime zest, and lime juice until smooth and well combined.
Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated. If using, fold in the dark chocolate chips or cacao nibs for an extra treat.
Scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the energy bites on a lined baking sheet or plate.
Once all the bites are rolled, refrigerate them for at least 30 minutes to firm up.
Store the energy bites in an airtight container in the refrigerator for up to a week.

Serve on a decorative plate, garnished with mint and lime zest.
