Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, shredded coconut, chopped nuts, salt, and cinnamon. Stir well to mix all the dry ingredients.
In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and stir until everything is well coated.
Spread the granola mixture evenly onto the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown. Keep an eye on it to avoid burning.
Remove from the oven and let it cool for about 10 minutes. As it cools, it will become crispy.
Once cooled, gently fold in the dark chocolate chips, allowing some to melt slightly into the granola.
Transfer the granola to an airtight container for storage.
Notes
Serve in a small glass jar with extra chocolate chips and pair with Greek yogurt or milk.
