Instructions
Prepare the crust: In a mixing bowl, combine the flour, cocoa powder, and powdered sugar. Add the softened butter and mix until crumbly.
Stir in the egg yolk and add cold water, mixing until the dough forms a ball.
Press the dough evenly into the bottom and up the sides of a 9-inch tart pan. Prick the bottom with a fork and refrigerate for 30 minutes.
Preheat the oven to 350°F (175°C). Bake the crust for 15 minutes, then remove and let cool.
Make the salted caramel: In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.
Slowly whisk in the cubed butter until melted, then gradually add the heavy cream while stirring. Be cautious of splatter.
Stir in the sea salt, then remove from heat and let cool slightly.
Pour the salted caramel into the cooled crust, spreading it evenly. Place it in the refrigerator for at least 1 hour to set.
Prepare the chocolate ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
Remove from heat and add the chocolate chips, stirring until smooth and glossy.
Pour the ganache over the salted caramel layer, spreading evenly.
Chill the tart: Return the tart to the refrigerator for at least 2 hours or until set completely.
Serve: Slice and serve chilled. Top with additional sea salt if desired.
