Instructions
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.
In a separate bowl, whisk together the egg yolks, sugar, instant espresso powder, and vanilla extract until the mixture becomes creamy and pale in color.
Slowly add the melted chocolate into the egg yolk mixture while constantly stirring to combine.
In another clean bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gently fold the beaten egg whites into the chocolate mixture until no streaks remain.
In a separate bowl, beat the chilled heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture, being careful not to deflate it.
Spoon the mousse mixture into individual serving glasses or bowls. Cover and refrigerate for at least 2 hours to set.
Once set, garnish with shaved chocolate or a dusting of cocoa powder before serving. Enjoy your rich and creamy mousse!
