In a medium bowl, mix the creamy peanut butter and powdered sugar until smooth and well combined. The mixture should be thick but spreadable.
Take a mini pretzel, and using a teaspoon or your fingers, spread a teaspoon of the peanut butter mixture onto one side of the pretzel.
Place another pretzel on top to create a sandwich. Repeat this process until all the pretzels are filled.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Dip each peanut butter pretzel sandwich into the melted chocolate, letting the excess chocolate drip off before placing them on a baking sheet lined with parchment paper.
Optional: While the chocolate is still wet, sprinkle a tiny pinch of sea salt on top for a sweet-salty flavor.
Once all pretzels are coated, refrigerate for about 30 minutes or until the chocolate hardens completely.
