In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and completely melted (about 1-2 minutes total).
Once the chocolate is melted, dip each pretzel rod into the chocolate, ensuring to coat it generously (you can use a spoon to help if needed). Allow any excess chocolate to drip off.
Immediately after dipping, roll the chocolate-coated pretzel rod in the crushed nuts or sprinkle it with colorful sprinkles, making sure to cover as much surface area as you desire.
Place the coated pretzel rods on the prepared parchment-lined baking sheet.
If you’d like, lightly sprinkle sea salt on top of the chocolate before it sets for a sweet and salty combination.
