In a large bowl, combine the olive oil, lime juice, chipotle powder, garlic powder, smoked paprika, cumin, and honey. Whisk together to create a marinade. Add salt and pepper to taste.
Add the shrimp to the marinade, making sure they are well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan to medium-high heat.
Thread the marinated shrimp onto the skewers, about 5-6 shrimp per skewer.
Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Be careful not to overcook.
Remove the skewers from the grill. Garnish with freshly chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
