In a small bowl, combine warm water, sugar, and yeast. Allow the mixture to sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine flour and salt. Make a well in the center, then add the yeast mixture.
Mix everything together until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
Place the dough in a greased bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a roll by rolling it into a ball.
In a large pot, bring 8 cups of water to a boil. Once boiling, add the baking soda carefully (it will bubble up).
Gently drop each roll into the boiling water, cooking 1-2 at a time for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Brush the tops of the rolls with melted butter and sprinkle with coarse sea salt.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Allow to cool slightly before serving.
Notes
Serve the rolls warm with extra melted butter on the side for dipping, and arrange them in a basket lined with a cloth napkin for a rustic touch.
