Ingredients
2
cups
rolled oats
1
cup
fresh blueberries (or frozen)
1
quarter cup
honey or maple syrup
1
half cup
almond butter (or any nut butter)
1
half teaspoon
vanilla extract
1
half teaspoon
baking powder
1
quarter teaspoon
salt
1
half teaspoon
cinnamon
1
quarter cup
chopped nuts (walnuts or almonds)
1
quarter cup
chocolate chips or dried fruits (optional)
Instructions
Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon. Stir until well mixed.
In another bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients and stir until combined.
Gently fold in the blueberries and chopped nuts (and chocolate chips or dried fruits if using).
Pour the mixture into the prepared baking dish and spread it evenly, pressing down firmly to pack it in.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
Remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, lift the bars from the pan using the parchment paper overhang and cut them into squares or rectangles.
