Place the flatbreads on a baking sheet lined with parchment paper. Brush each flatbread lightly with olive oil.
Evenly distribute the remaining BBQ sauce on top of each flatbread, covering the surface.
Layer the BBQ chicken evenly across both flatbreads.
Sprinkle the shredded mozzarella cheese generously on top.
Scatter the sliced red onions, corn kernels, and jalapeños (if using) over the cheese.
Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the cheese is bubbly and golden brown.
Remove the flatbreads from the oven. Sprinkle with fresh chopped cilantro and season with salt and pepper to taste. Let cool for a minute before slicing.
