Trim the crusts off each slice of bread to create a flat rectangle. Use a rolling pin to flatten each slice gently.
Evenly spread about 1/2 tablespoon of Nutella on each slice of bread. Place a few banana slices at one edge of the bread.
Starting from the edge with the banana, roll the bread tightly into a cylinder shape. Pinch the seam to seal it. Repeat until all slices are rolled.
In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.
Heat a skillet over medium heat and add a bit of butter. Dip each roll-up into the egg mixture, ensuring it is well coated.
Place the coated roll-ups seam side down in the skillet. Cook for about 2-3 minutes until golden brown, then turn to cook the other sides. Add more butter as needed.
Once golden and cooked through, remove from the skillet and place on a plate. Drizzle with maple syrup for added sweetness and serve warm.
